  1. 1 3/4 c. all-purpose flour

  2. 1 1/2 c. sugar

  3. 1 tsp. baking soda

  4. 1/2 tsp. salt

  5. 2 eggs

  6. 2 ripe med. bananas, mashed (1 c.)

  7. 1/2 c. vegetable oil

  8. 1/4 c. plus

  9. 1 tbsp. buttermilk

  10. 1 tsp. vanilla extract

  11. 1 c. chopped walnuts

  1. In a large bowl, stir together flour, sugar, baking soda and salt. In another mixing bowl, combine eggs, bananas, oil, buttermilk and vanilla; add to flour mixture, stirring just until combined. Fold in nuts. Pour into a greased 9x5x3 inch baking pan. Bake at 325 degrees for 1 hour and 20 minutes or until bread tests done. Cool on wire rack. Yield: 1 loaf. Recipe does not double well.
