  1. 3 tablespoons 45ml Olive oil

  2. 2 Garlic cloves - peeled and crushed

  3. 3 Yellow onions - thinly sliced (medium)

  4. 1 teaspoon 5ml Chopped fresh sage

  5. 1 teaspoon 5ml Chopped fresh basil

  6. 1 teaspoon 5ml Chopped fresh rosemary

  7. 1 teaspoon 5ml Chopped fresh thyme

  8. 2 teaspoons 10ml Chopped fresh parsley

  9. 3/4 cup 177ml Dry white wine

  10. 1 teaspoon 5ml Worcestershire sauce

  11. Salt - to taste

  12. Freshly-ground black pepper - to taste

  1. Heat a large frying pan and add the oil, garlic, onion and herbs. Turn the heat to low and cover the pan.

  2. Cook for 15 minutes, stirring frequently.

  3. Add the wine and Worcestershire sauce. Cover and simmer gently for 10 minutes more, or until the liquid is gone and the onion is tender.

  4. Salt and pepper (easy on the pepper) to taste. Serve as a condiment with roasted or grilled meats. Can also be served with fish. This recipe makes about 3 cups of relish.
