  1. 1 tablespoon 15ml Olive oil

  2. 1 tablespoon 15ml Chopped onion (medium)

  3. 2 teaspoons 10ml Chili powder

  4. 1 teaspoon 5ml Cumin

  5. 2 Diced tomatoes and green chiles - (10 oz ea)

  6. 1 Zucchini squash - diced (large)

  7. 2 Black beans - (16 oz ea) - rinsed and drained

  8. 2 cups 320g / 11oz Cooked rice

  1. Heat oil in a large nonstick skillet. Cook onion 5 minutes or until softened. Stir in chili powder and cumin and cook 1 minute. Add tomatoes and chiles, bringing it bring to a boil. Add zucchini and cook 3 minutes or until tender. Add beans and rice and cook 5 minutes or until heated through.

  2. This recipe yields 4 servings.
