  3. 2 eggs plus

  4. 2 yolks

  5. 1/3 cup sugar

  6. 1 teaspoon vanilla

  7. Freshly grated or ground nutmeg

  1. Preheat oven to 300 degrees.

  2. Whisk together the eggs, sugar, and vanilla.

  3. Heat the milk and bring to a slow simmer. Remove from heat and slowly pour the egg mixture into the milk.

  4. Strain the mixture into 4 custard cups, then place the cups in a pan filled with hot water.

  5. Dust with nutmeg.

  6. Bake for about 30 minutes, then let cool for several hours before serving. .
