  1. 25 g butter

  2. 250-300g of a selection of green vegetables , such as mangetout, green beans, sugar snap peas, asparagus tips

  3. zest of 1/2 lemons , grated

  4. 1 tsp caster sugar

  5. salt

  1. Heat the butter in a wok or frying pan. Add in the green vegetables.

  2. Stir-fry for 3-4 minutes until they are begin to soften but still remain slightly crisp.

  3. Add the lemon zest, sugar and salt and stir-fry for 30 seconds.

  4. Serve at once.
