  1. 6 skinless, boneless chicken breasts

  2. 1/2 stick butter

  3. 1 small onion - julienne

  4. 1 green pepper - julienne

  5. 1 cup sliced fresh mushroom s

  6. 1/2 cup black olive s

  7. 2 small fresh tomato 's, cut into small pieces

  8. 2 cups whole canned tomato es

  9. 1/2 cup olive oil

  10. garlic (amount depends on preference)

  11. salt and pepper

  1. Cut the chicken into fillets and flatten. Saute lightly in butter until golden brown. Pour off the excess butter.

  2. Add the green pepper, onion, mushrooms, olives and fresh tomatoes to the chicken.

  3. In a blender, mix canned tomatoes, olive, oil, garlic and Salt and pepper to taste. Pour over chicken. Simmer until the vegetables and chicken are tender.
