  1. 2 egg s beaten

  2. 1/3 cup buttermilk

  3. 1/2 cup vegetable oil

  4. 1 cup mashed banana s (3-4 large)

  5. 1 1/2 cups white sugar

  6. 1 3/4 cups all purpose flour

  7. 1 tsp. baking soda

  8. 1/2 tsp salt

  9. 1/2 cup chopped pecan s

  1. Preheat oven to 325 degrees. Spray one 9x5 loaf pan with cooking spray.

  2. Blend together the eggs, buttermilk, oil and bananas.

  3. Sift together the sugar, flour, baking soda, and salt. Add to banana mixture and stir in pecans (if desired). Mix well.

  4. Pour into prepared loaf pan and bake 1 hour and 20 mintues (check at 1 hour)or until a cake tester inserted in the center comes out clean.
