  1. Cake Batter

  2. 2 cups flour

  3. 1 1/2 tsp baking powder

  4. 1 1/2 tsp nutmeg

  5. 1/4 tsp salt

  6. 1/4 tsp baking soda

  7. 3 large eggs, separated

  8. 15 oz can sweet potatoes, drained

  9. 1 cup brown sugar, packed

  10. 1/2 cup butter, softened

  11. 1/2 cup buttermilk

  12. 1/2 cup raisins Cream Cheese Frosting

  13. 8oz pkg cream cheese, soft

  14. 1/2 cup butter

  15. 3 1/2 cups powdered sugar

  16. 1 tsp vanilla

  17. 1 Tbs orange peel

  18. Mix together until creamy.

  1. Heat oven to 350°. Grease & flour 2 cake pans.

  2. In medium size bowl combine first 5 ingredients. In large bowl beat egg yolks & sweet potatoes until smooth; add brown sugar & butter. Beat until fluffy. On low speed add flour & buttermilk just until smooth.

  3. Beat egg whites until soft peaks form and fold into cake batter. Add raisins.

  4. Bake 30 to 35 minutes. Cool and frost with Cream Cheese Frosting.
