  1. 2 2/3 cups all-purpose flour

  2. 2 cups sugar

  3. 2 tsp baking powder

  4. 1/2 tsp salt

  5. 1 cup milk

  6. 1/2 cup water

  7. 3/4 cup oil

  8. 1 Tbsp vanilla extract

  9. 2 large eggs

  1. Heat oven to 350ºF. You’ll need 24regular muffin cups with cupcake liners.

  2. Mix flour, sugar, baking powder andsalt in a large bowl with a whisk untilblended. Whisk milk, water, oil, vanillaand eggs in 4-cup liquid measuring cupor medium bowl.

  3. Make a well in the flour mixture.

  4. Gradually pour milk mixture into flourmixture; whisk until blended (somesmall lumps may remain).

  5. Divide batter into muffin cups. Bake20 to 25 minutes until a wooden pickinserted in center of a cupcake comesout clean.

  6. Cool cupcakes in pan on wire rack15 minutes. Remove from pan; coolcompletely on wire rack.

  7. To make chocolate cupcakes: Add 1cup unsweetened cocoa powder to dryingredients. Increase water to 1 cup andomit eggs. Prepare and bake as directed.
