  1. 1/2 teaspoon thyme

  2. 1/2 lb firm white fish

  3. 2 tablespoons vegetable oil

  4. 1 chopped onion

  5. 1 garlic clove

  6. 2 tablespoons flour

  7. 2 (14 ounce) cans low sodium chicken broth

  8. 1 (15 ounce) can corn

  9. 1/2 lb new potato

  1. sprinkle thyme over both sides of fish.

  2. in a large saucepan cook fish in 1 tablespoon of hot oil.

  3. heat remaining oil and add onion and garlic and cook until tender.

  4. stir in flour and cook 1 minute.

  5. add chicken broth , stir in corn and potatoes.

  6. remove skin and bones from fish and add to pot.

  7. Simmer 35 minutes stirring often.
