    1. 1 graham cracker pie crust

    2. 3 lg. sweet potatoes

    3. 1 1/2 c. brown sugar

    4. 2/3 c. evaporated milk

    5. 1/4 tsp. cinnamon

    6. 3/4 stick butter

    7. 1 egg

    8. 1 tsp. vanilla

    9. 1/2 tsp. nutmeg

    1. Peel, dice potatoes. Rinse well in cold water. Cover with water in pan. Boil over medium heat for 30 minutes. Remove from heat and drain. Add butter, mash thoroughly. Add remaining ingredients, mix well. Pour into pie crust. Bake at 375 degrees for 40 minutes. Cool at least 1/2 hour before slicing
