  1. 1/4 cup orange juice

  2. 2 tablespoons vegetable oil

  3. 2 tablespoons light soy sauce

  4. 1/8 teaspoon pepper

  5. 1 tablespoon lemon juice

  6. 1 clove garlic, minced

  7. 2 pounds farm-raised catfish fillets

  1. For the sauce, combine first six ingredients in a bowl. Brush farm-raised catfish fillets with sauce mixture.

  2. Preheat grill.

  3. Place fish on lightly oiled grill (four inches above hot coals). Grill for five minutes; brush frequently with sauce. Turn and grill for five minutes longer or until fish flakes easily when tested with a fork.

  4. Serve immediately.
