  1. 1kg small Desiree potatoes

  2. 200g green beans, trimmed, halved

  3. 2 teaspoons olive oil

  4. 240g (6) refrigerated vegetable sausages, sliced

  5. 1cm thick

  6. 1/2 cup soy cream cheese substitute

  7. 1/3 cup reduced-fat French dressing

  8. 3 green onions, thinly sliced

  9. 1 red capsicum, diced

  1. Place potatoes in a large saucepan; cover with water. Bring to boil. Cook for 15 minutes, until tender, adding beans 2-3 minutes before end of cooking time to blanch. Drain vegetables and cool. Cut potato in 2-3cm chunks.

  2. Heat oil in a small frying pan over moderate heat. Cook sausages for 2 minutes, until brown. Whisk cheese substitute with dressing in a small bowl until smooth. Season with salt and black pepper.

  3. Combine potato, beans, sausages, onion and capsicum in a serving bowl. Pour dressing over; lightly mix to combine.
