  1. tablespoon(s) Vegetable Oil

  2. 1/2 Yellow Onion ,

  3. 120 grams, diced

  4. 1/2 cup(s) Carrot ,

  5. 1, peeled & diced

  6. 1 1/2 cup(s) Celery ,

  7. 3 stalks, chopped

  8. 1 Baking potato , diced

  9. 1 teaspoon(s) Garlic ,

  10. 1 clove

  11. 4 Granny Smith Apples , diced

  12. 2 cup(s) Low sodium vegetable broth

  13. 2 teaspoon(s) Curry Powder

  14. 1 teaspoon(s) Ground Cumin

  15. 1 teaspoon(s) Dried Thyme

  16. 1/2 teaspoon(s) Table Salt

  17. 1/2 teaspoon(s) Ground Black Pepper

  1. Sauté the onion, carrot and celery in some vegetable oil for about 10 minutes.

  2. Add the potatoes, sauté for another 5 minutes.

  3. Add the garlic, the apple and the spices, continue to sauté for a few more minutes.

  4. At this point add the broth, scrape the bottom of the pan and bring to a simmer. Cook for another 10 minutes and then add the celery leaves and cook for another 5 minutes.

  5. Now blend the soup (or parts of it if you like chunks.) Salt and pepper to taste and serve.
