  1. 2 Eggs - separated

  2. 1/2 cup 31g / 1.1oz Buckwheat flour

  3. 1/2 cup 31g / 1.1oz Whole-wheat flour

  4. 1 cup 237ml Milk

  5. 1 tablespoon 15ml Sugar

  6. 2 tablespoons 30ml Vegetable oil

  7. 1 tablespoon 15ml Baking powder

  8. 1/2 teaspoon 2 1/2ml Salt

  9. 1/4 cup 59ml Wheat germ or wheat bran

  1. Beat egg whites in medium bowl until foamy. Beat in remaining ingredients except wheat germ just until smooth.

  2. Lightly grease a griddle or 10-inch skillet. Heat griddle over medium heat or to 375 degrees.

  3. For each pancake, pour about 3 tablespoons batter onto hot griddle. Cook pancakes until puffed and dry around edges. Sprinkle each pancake with about 1 teaspoon wheat germ. Turn and cook other sides until golden brown.

  4. This recipe yields about 8 (4-inch) pancakes.
