  1. 3 cups cauliflower florets

  2. 1 teaspoon lime juice , fresh

  3. 1/2 teaspoon lime peel , fresh, minced

  4. 2 garlic cloves , minces

  5. 1/4 teaspoon curry powder

  6. 1/8 teaspoon red pepper

  7. 1 tablespoon peanut butter , plus

  8. 1 teaspoon peanut butter

  9. 1/3 cup apple juice, natural

  1. Over medium-high heat, cook cauliflower in small amount of water until just fork-tender. Drain & set aside.

  2. Combine rest of ingredients in small saucepan & bring to a low simmer.

  3. Continue to cook, stirring occasionally, until mixture thickens enough to adhere to back of spoon.

  4. Toss sauce and cauliflower together & serve warm or at room temperature.
