  1. 3 1/2 lbs 1589g / 56oz Beef chuck or sirloin roast

  2. 2 tablespoons 30ml Corn oil

  3. 1 teaspoon 5ml Salt

  4. 1 Pepper

  5. 1 1/2 teaspoons 7 1/2ml Garlic powder

  6. 1 teaspoon 5ml Carrot - sliced thin (large)

  7. 1 teaspoon 5ml Onion - chopped (medium)

  8. 3/4 cup 177ml Burgundy wine

  9. 3/4 cup 177ml Sour cream - lite, room temp

  10. 1/2 cup 118ml Water

  11. 3 tablespoons 45ml Flour

  12. 1 tablespoon 15ml Lemon juice

  1. Rub meat with salt and pepper. Heat oil in Dutch oven, over medium heat.

  2. Brown roast on all sides. Add garlic, onion, and carrots.

  3. Cook until onion is browned. Drain grease from pan.

  4. Lower heat and add wine and sour cream.

  5. Cover tightly and simmer over very low heat for 2 to 3 hours or until meat is tender.
