  1. 3 cloves garlic, finely chopped or brown onion,

  1. In a pot, fry garlic and onion in vegetable oil until brown.

  2. Turn down heat and add cauliflower and carrots. Stir, until starting to soften.

  3. Pour in coconut milk and chick peas, tomatoes and zucchini.

  4. Add curry, salt and pepper to taste.

  5. Simmer for 15-20 minutes.

  6. Serve with rice.
