  1. 1 c. water

  2. 2 tbsp. (heaping) cornstarch

  3. Pinch of salt

  4. 1/2 c. sugar (possibly little more)

  5. 1 lemon, juice and grated rind

  6. 3 eggs, separated

  7. 1 baked pie shell

  8. 8 tsp. powdered sugar

  1. In a double boiler bring to a boil the 1 cup of water.

  2. Make a paste of the cornstarch and salt, using small amount of water. Add to the water. Add the sugar, lemon juice and rind.

  3. Beat the egg yolks and stir in slowly. When thickened, pour into the baked pie shell.

  4. Cover with meringue by beating the egg whites until stiff and adding the powdered sugar, continuing beating until stiff. Brown lightly.
