  1. 1/2 lbs hot Owens sausage

  2. 1 tsp salt

  3. 1/4 tsp pepper

  4. 1/2 C quick cooking grits

  5. 1 C grated cheddar cheese

  6. 5 egg s

  7. 1/2 C milk

  1. Brown and crumble sausage. Add 1 c water and simmer for 10 min. Drain while reserving ½ c liquid.

  2. In saucepan, combine liquid, 1 c water, salt and pepper. Bring to a boil and stir in grits. Cook slowly, stirring occassionally until thick.

  3. Add cheese, 1 slightly beaten egg, milk and sausage.

  4. Pour into 8x8 baking dish. Make 4 depressions and break an egg into each.

  5. Bake at 350° for 20 min.
