  1. cauliflower

  2. carrots

  3. zucchini

  4. broccoli

  5. French green beans

  6. onions

  7. 1 Tin sweetcorn

  8. 2 Tins coconut milk

  9. Thai curry seasoning - mostly Corriander, cumin and a touch of anise.

  10. 1 lemon

  11. 2 limes

  12. vegetable stock

  13. salt and pepper

  1. Chop the vegetables (Cauliflower, carrots, Zucchini, broccoli, beans) preferably into strips.

  2. Fry on a reasonably high heat until they begin to soften then add onion, finely chopped, or in strips, depending upon taste.

  3. When Onions are beginning to go clear, add Sweetcorn. fry for another minute.

  4. Add coconut milk, seasoning to taste, salt, pepper and juice of lemons and limes.

  5. Extend to taste with vegetable stock. The consistency may be fairly thin.

  6. Serve hot with seasoned rice and garlic & coriander naan bread. The rice will help to absorb liquid so it may be eaten.
