  1. For Pickled Cucumbers

  2. 1/2 cup 118ml Distilled white vinegar

  3. 2 1/2 tablespoons 37ml Light brown sugar - (firmly packed)

  4. 1 1/4 teaspoons 6 1/3ml Salt

  5. 3/4 teaspoon 3.8ml Dried hot red pepper flakes

  6. 1 Seedless cucumber - (abt 1 lb) - sliced very thin

  7. For Burgers

  8. 2 Garlic cloves

  9. 1 1/2 teaspoons 7 1/2ml Finely-chopped peeled fresh gingerroot

  10. 1/2 cup 73g / 2.6oz Chopped fresh coriander

  11. 1/2 cup 20g / 0.7oz Chopped fresh mint leaves

  12. 1/2 cup 20g / 0.7oz Chopped fresh basil leaves

  13. 3 tablespoons 45ml Fresh lime juice

  14. 3 teaspoons 15ml Sugar

  15. 2 Flat anchovy fillets

  16. 2 lbs 908g / 32oz Ground turkey

  17. 1/4 cup 36g / 1 1/3oz Fresh bread crumbs

  18. 1/4 teaspoon 1 1/3ml Cayenne - or to taste

  19. 4 Sesame hamburger buns or onion rolls - split and toasted

  1. Make pickled cucumbers: In a small bowl stir together all pickled cucumber ingredients except cucumber until sugar and salt are dissolved. Add cucumber, stirring to coat well, and marinate 30 minutes.

  2. Make burgers: Prepare grill. Into a food processor with motor running, drop garlic and gingerroot. Add coriander, mint, basil, lime juice, sugar and anchovy fillets and blend well. In a bowl combine turkey, herb mixture, bread crumbs and cayenne and form into six 1-inch-thick patties. Season burgers with salt and pepper to taste and grill on an oiled rack set 5 to 6 inches over glowing coals 6 minutes on each side, or until just cooked through.

  3. Drain cucumbers. Transfer burgers to buns or rolls and top with pickled cucumbers.

  4. This recipe yields 6 servings.
