  1. 1/4 c Vegetable oil

  2. 1 c Onion, thinly sliced

  3. sliced 1 3/4 c Green bell pepper, thinly

  4. 1 1/2 ts Brown sugar, firmly packed

  5. 2 tb Oyster sauce

  6. 1 tb Soy sauce

  7. 1 tb Fish sauce (nam pla)

  8. very thinly sliced 1/2 c Fresh ginger, peeled and 1/4x1-inch strips

  9. 10 oz Top sirloin steak, cut into 1 Garlic clove, minced

  10. 1 1/2 c Freshly-cooked rice

  1. Heat oil in wok or large skillet over medium-high heat.

  2. Add garlic; stir-fry until browned, 20 to 30 seconds.

  3. Add beef and stir-fry until browned.

  4. Add ginger, fish sauce, and soy sauce; stir-fry for 1 minute.

  5. Mix in oyster sauce and sugar.

  6. Add bell pepper and onion.

  7. Cover, remove from heat and let stand for 2 minutes.

  8. Serve hot over freshly-cooked rice.
