  1. 3 cups rice, brown cooked

  2. 2 cups mozzarella cheese shredded, divided

  3. 1 cup peanut butter crunchy, divided

  4. 1 each egg beaten

  5. 1 x nonstick cooking spray

  6. 1/2 cup water hot

  7. 1/4 cup cilantro minced

  8. 2 tablespoons soy sauce

  9. 3 tablespoons sesame oil dark, divided

  10. 1/4 teaspoon red pepper flakes ground

  11. 2 cups broccoli florets

  12. 1 medium red onion chopped

  13. 2 large carrots julienned

  1. Combine rice, 1 cup cheese, 1/4 cup peanut butter and egg in large bowl.

  2. Press firmly into 12-inch pizza pan or 10-inch pie pan coated with cooking spray.

  3. Bake at 400 degrees F for 8 minutes.

  4. Mix remaining 3/4 cup peanut butter, water, cilantro, soy sauce, 2 tablespoons sesame oil and red pepper in small bowl; set aside.

  5. Stir-fry broccoli, onion and carrots in remaining 1 tablespoon sesame oil in large skillet over medium-high heat until tender-crisp.

  6. Spread sauce over crust; top with vegetable mixture.

  7. Sprinkle with remaining 1 cup cheese.

  8. Bake at 400 degrees F. for 10 to 12 minutes.

  9. Let stand 5 minutes before serving.
