    2. 2 tb Finely chopped fresh or 1/2 ts Dried mint leaves

    3. 1 tb Lemon juice

    4. 1 Cl Garlic, finely chopped

    5. Dash of white pepper

    6. 1 md Cucumber, thinly sliced

    7. about 1-1/4 cups)

    1. Mix all ingredients in medium bowl except cucumber.

    2. Cover and refrigerate about 2 hours or until chilled.

    3. Just before serving, stir in cucumber.

    4. Garnish with additional mint if desired.

    5. SERVINGS (ABOUT 1/2 CUP); 50 CALORIES PER SERVING.
