  1. 1 1/2 pounds green beans, trimmed

  2. bowl of ice water

  3. 3 tbsp butter

  4. 2/3 cup sliced almonds

  5. salt and fresh ground black pepper to taste

  1. Bring a pot of salted water to a boil. Add beans and blanch for 3-4 minutes, until crisp-tender. Remove beans with a strainer into a bowl of ice water. Once completely chilled, drain, and reserve.

  2. In a large skillet, melt the butter over medium-low heat. Add the green beans and cook, tossing occasionally, until they are heated through, about 4 minutes. Season with salt and fresh ground black pepper to taste. Use tongs to transfer to a serving dish.

  3. Add the almonds into the now empty skillet, and cook in the remaining butter (more can be added if necessary) until the almonds turn a very light tan. Pour the toasted almond and butter over the green beans.

  4. This can be done a few hours ahead and reheated in the microwave for a few minutes before service.
