  1. 1/4 c Rice, long grain

  2. Ground 1/2 c Almonds, blanched, coarsely

  3. Nutmeg, to taste (fresh)

  4. 1/2 ts Almond extract

  5. 2 tb Sugar

  6. 2 tb Butter, melted

  7. 1 ts Salt

  8. 1 qt Milk

  9. 6 c Water, boiling

  10. 1 c Heavy cream, whipped

  1. Place rice in a strainer and pour the boiling water over rice.

  2. Drain well.

  3. steep 1 hr.

  4. , or until all is thick and creamy.

  5. Stir in butter, sugar, almonds and extract, nutmeg and almonds.

  6. Serve warm or chilled, with whipped cream.
