  1. 6 tb Maple syrup

  2. 4 ts Unsalted butter, melted

  3. 2 Large apples*

  4. 3/4 c Yellow or white cormeal

  5. 3/4 c All-purpose flour

  6. 1 ts Baking powder

  7. 1/2 ts Salt

  8. 1/4 ts Baking soda

  9. 1 c Buttermilk

  10. 1 Large egg, lightly beaten

  11. 1 tb Vegetable oil

  1. *Peeled, cored, cut into 1/4-inch slices.

  2. +Preferably stone-ground Preheat oven to 375 degrees F.

  3. Heat 2 T.

  4. maple syrup and 1 tsp.

  5. butter in a heavy 10-inch ovenproof skillet over medium-high heat.

  6. Add apples and saute for about 5 minutes, or until slightly softened.

  7. Remove from heat.

  8. Using two spoons, arrange the slices, fanning them out from the center of the skillet.

  9. In a medium-sized mixing bowl, stir together cornmeal, flour, baking powder, salt and baking soda.

  10. In a small mixing bowl, beat together buttermilk, egg, remaining 1//4 cup maple syrup, remaining 1 T.

  11. melted butter and oil.

  12. Make a well in the center of the dry ingredients and pour in the buttermilk mixture.

  13. Stir with a wooden spoon until just combined.

  14. Spread the batter evenly over the apples and bake for 30 to 35 minutes, or until a toothpick inserted into the center comes out clean.

  15. Invert onto a platter, cut into wedges and serve immediately, topped with more syrup.
