  1. For The Dipping Sauce

  2. 6 tablespoons 90ml Soy sauce

  3. 6 tablespoons 90ml Hoisin sauce

  4. 4 teaspoons 20ml Honey

  5. 2 teaspoons 10ml Chinese chili sauce

  6. (available in Asian markets)

  7. 2 teaspoons 10ml Minced garlic

  8. For The Marinade

  9. 3 tablespoons 45ml Soy sauce

  10. 3 tablespoons 45ml Asian sesame oil

  11. 3 tablespoons 45ml Hoisin sauce

  12. 3 tablespoons 45ml Dry sherry

  13. 1 tablespoon 15ml Minced garlic

  14. 1 tablespoon 15ml Minced fresh ginger

  15. 1 Shallot - finely chopped

  16. 1/2 teaspoon 2 1/2ml Salt

  17. 6 Center-cut 1 1/2"-thk loin pork chops - (abt 4 lbs)

  18. 2 tablespoons 30ml Honey

  19. 2 tablespoons 30ml Asian sesame oil

  1. Prepare the dipping sauce by combining all of the ingredients in a bowl. Set aside.

  2. Combine the marinade ingredients in a large bowl. Add the pork chops and toss to coat. Let rest, covered, at room temperature for 2 hours, turning a few times.

  3. Combine the honey and sesame oil in a small bowl.

  4. Place 2 nonstick skillets, large enough to hold 3 pork chops each, over medium heat. Brown the chops lightly, about 5 minutes per side, basting with the honey mixture. Reduce the heat to medium-low and cover. Cook, turning the chops after 8 minutes, until they are cooked through, about 15 minutes.

  5. Serve each chop with a little bowl of dipping sauce.

  6. This recipe yields 6 servings.
