  1. 1/2 Onion - chopped

  2. 1/4 teaspoon 1 1/3ml Garlic - finely chopped

  3. 1/4 teaspoon 1 1/3ml Fresh ginger - finely chopped

  4. 1 Lime - juiced

  5. 1 Jalapeno - finely chopped

  6. 1 cup 93g / 3 1/3oz Fresh cranberries - chopped

  7. 1 Peaches

  8. 2 tablespoons 30ml Cilantro - chopped

  9. 2 tablespoons 30ml Coconut - grated

  1. Sautee onion until opaque. Add garlic and sautee lightly. Add remaining ingredients and heat thoroughly.

  2. NOTES : The colors in this salsa are great. Serve this over grilled chicken breasts but it is also good used as a condiment with any dinner.
