  1. 6 oz Rump steak

  2. 1 ts Black pepper

  3. 1 Tb Cornstarch

  4. 1 ea Large tomato

  5. 3 Tb Oil

  6. 1 ea Medium onion

  7. 1 1/2 Tb Fish sauce (nuoc mam)

  8. 1 ea Fresh Spinach

  9. 1 ea Clove of garlic

  1. Trim any fat from steak.

  2. Sliced thinly.

  3. Chop onion finely and combine with meat, 1/2 teaspoon pepper, 1/2 tablespoon fish sauce and cornstarch.

  4. Rinse spinach and cut each leaf into 3 pieces.

  5. Slice tomato into thin wedges and crush garlic.

  6. Heat 1 1/2 tablespoons of oil in a frying pan.

  7. Add remaining garlic and stir fry until fragrant.

  8. Add spinach and stir fry for 3 minutes.

  9. Add remaining fish sauce and tomato.

  10. Stir fry 2 minutes, then remove to a heated serving platter.

  11. Heat remaining oil in frying pan.

  12. Add meat and stir fry for 5 minutes.

  13. Add 2 tablespoons waterif meat sticks to pan.

  14. Remove meat from pan and sprinkle over spinach.

  15. Sprinkle with pepper and serve.
