  1. 1 Mori-Nu silken style tofu - (12 oz) - firm or extra firm

  2. 1 1/2 cups 24g / 0.8oz Cilantro leaves - (loosely packed)

  3. 1/3 cup 20g / 0.7oz Thinly-sliced green onion

  4. 1/3 cup 78ml Rice wine vinegar

  5. 1/4 cup 36g / 1 1/3oz Freshly-chopped parsley

  6. 2 tablespoons 30ml Olive oil

  7. 2 tablespoons 30ml Minced garlic

  8. 2 tablespoons 30ml Nutritional yeast flakes

  9. 1 teaspoon 5ml Ground cumin

  10. 1/2 teaspoon 2 1/2ml Sea salt

  11. 1/4 teaspoon 1 1/3ml Freshly-ground black pepper

  12. 1/8 teaspoon 0.6ml Cayenne pepper

  1. In a blender or food processor, place the tofu, and process for 1 to 2 minutes or until smooth. Scrape down the sides of the container. Add the remaining ingredients and process for an additional 1 to 2 minutes or until very smooth and creamy.

  2. Transfer the dressing to an airtight container and store the dressing in the refrigerator for 2 to 3 days.

  3. This recipe yields 2 cups.
