  1. ARTICHOKES:

  2. 1-1/2 lb fresh artichokes, about 18 baby artichokes

  3. 1/2 teaspoons salt, to taste

  4. 1/4 cup hot pepper sauce

  5. 1/4 cup unsalted butter, melted

  6. 1 cup water

  7. PEPPER DIP:

  8. 7 ounces roasted red peppers with brine, drained

  9. 1 garlic clove, chopped

  10. 1/4 cup mayonnaise

  11. 2 tablespoons dijon mustard

  12. 2 tablespoons hot pepper sauce

  1. Grilled Baby Artichokes with Pepper Dip Recipe photo by dLife® Grilled Artichokes: Wash and trim tough outer leaves from artichokes. Cut 1/2-inch off top of artichokes, then cut in half lengthwise.

  2. In 3-quart microwavable bowl, place artichoke halves, 1 cup water and salt.

  3. Cover, microwave on high 8 minutes or until just tender. Thread artichoke halves onto metal skewers.

  4. Preheat grill to medium.

  5. In small bowl, combine hot sauce and melted butter. Brush mixture over artichokes.

  6. Grill 5 minutes or until tender. Turn and baste several times with sauce. Serve artichokes with Roasted Pepper Dip.

  7. Roasted Pepper Dip: In food processor or blender, place roasted peppers and garlic. Cover and process on high until very smooth.

  8. Add mayonnaise, mustard, hot sauce, and salt. Process until well blended. Cover and refrigerate 30 minutes.
