  5. Cheddar cheese, grated 100g

  6. Made mustard 2 1/2ml

  8. Potatoes, peeled and very thinly sliced 900g

  9. Onions, sliced 2

  10. Leeks, sliced 2

  11. Pepper and salt to taste

  12. Cheddar cheese, grated 50g

  1. Directions To make the sauce, melt the butter in a pan, add the flour and gradually stir in the milk Bring to the boil stirring all the time.

  2. Add the cheese, salt pepper and mustard to taste.

  3. Butter the cooking pot.

  4. Melt the butter in a pan.

  5. Quickly saute the potato slices and onion.

  6. Arrange alternate layers of potato and onion, leeks and grated cheese.

  7. Season each layer with pepper and salt Pour over the hot sauce.

  8. Cook for the recommended time.

  9. A little extra cheese may be sprinkled over just before serving.

  10. Remove the pot from the outer casing and brown under a hot grill.
