  1. 1 cup almonds, finely ground

  2. 1 cup chickpea flour

  3. 3/4 cup brown sugar

  4. 1 egg yolk

  5. 1/4 lb butter

  6. 1 teaspoon cardamom

  1. Preheat oven to 300°F.

  2. Cream together softened butter and sugar.

  3. Add egg yolk, mix until smooth and creamy.

  4. Add flour and finely ground almonds (almond meal), knead until soft dough forms.

  5. Roll balls a little smaller than walnuts but bigger than hazelnuts, place on cookie sheet and flatten.

  6. Bake at 300° 12-18 minutes (my oven did it in 15 minutes, but my friend's needed 20, so watch carefully the first time you make these!).

  7. Let cool on a wire rack.
