  3. 1 tablespoon dried thyme

  4. teaspoon cayenne pepper

  5. teaspoon white pepper

  6. 1 teaspoon onion powder

  7. 1 teaspoon garlic salt

  8. 4 x firm white fleshed fish fillets

  9. liquid smoke

  1. Mix together spices.

  2. Dip fish into the spices to lightly coat on one side only.

  3. Brush a few drops of liquid smoke on the other side and place un-spiced side on oiled BBQ flat-plate, turning once until done.
