  1. 4 medium potatoes

  2. 2 medium sweet potatoes

  3. 100g fetta cheese, crumbled

  4. 100g baby spinach leaves

  5. 1 tablespoon finely chopped fresh chives

  6. cup finely chopped fresh basil

  7. Dressing

  8. 1 clove garlic, crushed

  9. 2 tablespoons balsamic vinegar

  10. 2 tablespoons olive oil

  11. Salt and pepper to taste

  1. Peel potatoes and sweet potatoes; cut into 3cm cubes. Combine potatoes and sweet potatoes in a large, oiled baking dish; season with salt and pepper.

  2. Cook in a hot oven, 200C, for about 45 minutes or until tender.

  3. Dressing: combine all ingredients in a small bowl; mix well.

  4. Combine potatoes, sweet potatoes, cheese, baby spinach and herbs in a large bowl. Drizzle with dressing; toss gently.
