  1. 125g/4oz plain flour

  2. 2 eggs, beaten

  3. 1 1/4 cups/

  4. 280ml/10fl oz soy milk

  5. salt and black pepper

  6. 8 soy sausages

  7. 1 Tbsp chopped fresh parsley

  1. Method :

  2. Sift the flour into a bowl, add the beaten egg and mix well with a fork.

  3. Add the soy milk, sprinkle with the salt and pepper then whisk very well. Let the mixture stand for 30 minutes.

  4. Heat the oven to 190°C (375°F). Place the sausages in an oven-proof dish and pour the batter over them.

  5. Bake in the oven for about 30 minutes or until the batter is golden brown. Sprinkle with the chopped parsley and serve hot.
