  1. 1 lb pork tenderloin cut into thin slices

  2. 3 TBS peanut oil

  3. 4 shallots chopped

  4. 3 Thai chillies finely chopped

  5. 1 piece of 1 in blachan

  6. 2 pieces of lemon grass finely shredded ( bottom part only)

  7. 1 cup coconut milk

  8. 1 cup chicken stock

  9. juice of one lemon

  10. 2 TBS cilantro chopped

  11. 1 tsp orange zest

  1. Heat the oil in a wok on high heat and add the shallots,lemon grass, blachan,chillies and stir rapidly for 30 seconds. Add the pork and stir fry for 2 minutes. Add the coconut milk, chicken stock, lemon juice and simmer for 30 minutes. Sprinkle with the orange zest and cilantro and serve.
