  1. 2 Tbs Veggie oil

  2. 1 yellow onion , chopped or sliced

  3. 3 garlic cloves minced

  4. 1-2 poblano peppers , chopped (depending on how spicy you want it)

  5. salt and pepper

  6. 1 cup shredded carrot

  7. 6 cups chicken broth

  8. 1 cup raw, cubed chicken

  9. 3/4 pkg wheat spaghetti noodles (or as much as you like)

  10. juice and zest of 1 lime

  11. 1 tsp basil or 1 tbs fresh chopped basil

  1. Heat pot with oil over high heat.

  2. Add onion, peppers and garlic Season with salt and pepper Cook 2 minutes Add carrot and broth cover and bring to a simmer Add chicken Simmer 5 minutes Add noodles simmer 5 minutes Add lime juice and basil Serve in bowls and top with pinch of lime zest
