  1. 8 red potatoes

  2. 1/2 cup milk

  3. 1 tablespoon vegetable oil

  4. 2 tablespoons butter

  5. 1 cup ricotta

  6. scallions

  7. 4 cloves of garlic (or more if you like garlic)

  8. parmesan cheese or parmigiano regiano or romano

  9. salt and pepper

  1. Peel the potatoes.

  2. Stick the potatoes in a pot and boil them for around 15-20 minutes or until soft.

  3. Add some salt to the pot.

  4. Chop up your scallions.

  5. cloves of garlic:

  6. Smash the garlic with the flat side of your knive and take the skin off. Then chop the garlic until very fine.

  7. Chopped garlic and scallions:

  8. In a separate pot add the tablespoon of vegetable oil.

  9. Add 2 tablespoons of butter:

  10. Add the chopped garlic and saute for 2 minutes.

  11. Add the chopped scallions and saute for a minute.

  12. Saute and then remove from the burner.

  13. After 20 minutes the potatoes are done:

  14. Smash the potatoes:

  15. Add the scallion and garlic mixture to the potatoes and mix together:

  16. Add 1 cup of ricotta cheese and mix together:

  17. Add 1/2 cup of milk and mix together:

  18. Add your choice of cheese and mix together:

  19. Add salt and pepper to taste, possibly extra butter.

  20. Serve.
