  1. 2 1/2 lb Pork loin roast

  2. 1/2 ts Sage (ground)

  3. 1/4 ts Garlic powder

  4. 4 md Potatoes, cut in wedges

  1. In a small bowl mix sage and garlic powder, plus 1 ts salt and 1/4 ts pepper.

  2. Rub on roast.

  3. Place on rack in shallow roasting pan.

  4. Roast in pre-heated 325 F oven for 1 hour.

  5. Add potatoes.

  6. Baste with pan drippings.

  7. Roast 1 to 1 1/2 hours longer, basting potatoes occasionally, until potatoes are tender and meat thermometer, inserted in centre of roast, registers 170 F.

  8. Let stand 10 minutes before slicing.
