  1. 1 Kg. mutton (cut into 1 1/2 inch pieces)

  2. 1 tsp whole black pepper

  3. 2 cinnamon sticks

  4. 2-3 black cardamoms

  5. 2 bay leaves

  6. 1 large onion ,sliced

  7. 1/2 kg. tomatoes ,chopped

  8. 6-7 green chillies

  9. 2 tbsp ginger and garlic paste

  10. 1 tsp red chilli powder

  11. 1 tsp salt

  12. 1/2 cup oil

  1. Place the mutton,black pepper,cinnamon,cardamom and bay leaves in a large pot.

  2. Add enough water to make the mutton tender.

  3. Cover and cook till mutton is tender.

  4. Heat oil in a shallow frying pan or karahi.

  5. Add onion,stirring constantly fry for 5 minutes or until soft.

  6. Add tomatoes,green chillies,ginger and garlic paste,red chilli powder,salt and mutton.

  7. While stirring frequently fry on high heat for few minutes,then reduce heat to medium.

  8. Cover and cook for 15 minutes until the oil begins to separate.

  9. Garnish with coriander leaves,diagonally cut green chillies and thin julienne's ginger.

  10. Serve hot with naan or chappati.
