  1. 3 Tbsp. butter

  2. 1/4 c. flour

  3. 4 c. milk

  4. 2-3 c. diced potato es

  5. 1/2 c. minced onion

  6. 3/4 tsp. salt

  7. 1/2 tsp. freshly ground pepper

  8. Dash of nutmeg

  9. Garnishes if desired: cheese , chives, bacon

  1. In large saucepan, melt butter and add the flour. Stir constantly until smooth and then cook for an addition 1 minute.

  2. Slowly add the milk. When totally incorporated and smooth, add in the remaining ingredients.

  3. Cook over medium heat, stirring occasionally, until potatoes are soft and the mixture has thickened, about 40 minutes. If needed, add more S&P to taste.

  4. If desired, may serve with bacon, cheese, and chives to make it a Baked Potato Soup.
