  1. 1 tablespoon oil

  2. 1 onion , chopped

  3. 2 teaspoons red curry paste

  4. 2 1/2 cups coconut milk

  5. 4 chicken breast fillets, sliced

  6. 1 red capsicum, chopped

  7. 1 cup chopped greens

  8. rice or noodles, to serve

  1. Heat the oil in a large frypan over medium-high heat. Add the onion and cook, stirring, for 3 minutes, or until the onion is soft.

  2. Add the curry paste and cook for 1 minute. Add the coconut milk to the pan and let it simmer for 5 minutes.

  3. Add the chicken, capsicum and greens and let the curry simmer for 5 minutes, or until the chicken is cooked. Serve with rice or noodles.
