  1. 1 pound ground white turkey

  2. 3 baby carrots

  3. 1/4 cup of coconut milk

  4. 1 small piece of fresh ginger

  5. 1/4 of a small onion

  6. 1/4 cup of chopped fresh cilantro

  7. 1 tablespoon cumin

  8. 1 tablespoon turmeric

  9. 2 green onions finely chopped

  10. pinch of salt

  1. Place the first five ingredients in a food processor and pulse until most all of the vegetables are finely chopped.

  2. In a bowl add the ground turkey, contents of the food processor, the finely chopped cilantro and green onions as well as the cumin, turmeric and the salt.

  3. Using two wooden skewers per chicken stick, take a large meatball sized portion of the turkey mixture and form around the sticks in a long flat shape that looks like a Twinkie or a log. Oil a broiler pan and place the skewered turkey logs on the broiler pan.

  4. Bake in a 400 degree oven for approximately 30 minutes or until the top of the turkey logs start to turn a nice golden color.

  5. Serve over a bed of Jasmine curry rice with a spicy peanut sauce.

  6. Enjoy!
