  1. 3 lb. boneless chuck roast

  2. 2 tbsp. of Dijon mustard

  3. 1 large turnip .peeled and cut into chunks

  4. 6 red potatoeslarge ones cut on half

  5. 4 carrots , scraped. cut in two inch chunks

  6. 4 parsnips , scraped cut in

  7. 2 inch chunks

  8. 1 fat leekcleaned and sliced into half moons

  9. 1 jar of prepared horseradish

  10. 4 fat cloves of chopped garlic

  11. 1/2 teaspoon pepper

  12. 1 bottle of amber beer , warm and let one bouillion cube melt in the beer , this is your salt !

  13. 2 cups of sour cream

  14. 2 tbsp. of fresh horseradish

  15. 2 teaspoons of toasted caraway seeds , crushed

  16. minced fresh parsley

  1. Layer veg matter into bottom of crock pot.

  2. Rub roast with mustard. Sprinkle all sides with pepper.

  3. Nestle on top of veggies.

  4. Top roast with chopped garlic and prepared horseradish.

  5. Pour in beer seasoned with a bouillion cube into crock pot.

  6. Cook on low heat 8 hours.

  7. Mix sour cream, fresh horseradish and caraway.

  8. Serve on the side.
