  1. 1 cup 62g / 2 1/5oz 2 tb. All purpose flour

  2. 1/3 cup 65g / 2 1/3oz Granulated sugar

  3. 1 1/2 teaspoons 7 1/2ml Baking powder

  4. 1/4 teaspoon 1 1/3ml Salt

  5. 1/2 cup 118ml Skim milk

  6. 1/4 cup 59ml Canola oil

  7. 1/4 cup 49g / 1.7oz Egg substitute

  8. 1 1/2 oz 42g Mini semisweet chocolate - morsels

  9. 1 tablespoon 15ml Grated orange peel

  1. Preheat oven to 400F. Line 24 mini muffin cups with paper lines.

  2. In large bowl, combine flour, sugar, baking powder and salt. Add milk, oil and egg substitute; stir just until combined. Stir in chocolate and orange peel; mix just until combined.

  3. Spoon batter evenly into prepared cups, filling each about two-thirds full.

  4. Bake 12-15 minutes, until golden and toothpick inserted in center comes out clean. Remove from pan; cool completely on rack.
