  1. NOTES: DO NOT OMIT OR SUBSTITUTE TELLICHERRY PEPPERCORNS, WHITE PEPPER OR ACCENT SEASONING (MONOSODIUM GLUTAMATE). MONOSODIUM GLUTAMATE IS THE INGREDIENT WHICH ENHANCES THE SEASONINGS TO AN AUTHENTIC BALANCE, AND GIVES KENTUCKY FRIED CHICKEN ITS SIGNATURE SWEET FLAVOR. IF NOT BRINING CHICKEN, ADD AN ADDITIONAL 1/2 TEASPOON SEA SALT. JUNIPER BERRIES, GROUND BAY LEAVES AND FENNEL MAY BE ORDERED FROM MARION-KAY SPICES AS WELL. GRIND BLACK CARDAMOM PODS, JUNIPER BERRIES AND TAHITIAN VANILLA BEANS INDIVIDUALLY IN A CLEAN SPICE MILL OR COFFEE GRINDER, AS FINELY AS POSSIBLE. MEDIUM-GRIND TELLICHERRY PEPPERCORNS IN A PEPPER MILL.   2. MEASURE the following BASE MIXTURE and 11 SECRET HERBS AND SPICES ingredients (excluding flour) into a large sealable container, such as a GLAD food storage container or a Ziploc bag: 4 1/2 teaspoons fine sea salt (or popcorn salt), 1 1/2 teaspoons nonfat dry milk powder, 1 1/8 teaspoons Accent seasoning, 1 teaspoon egg white powder, 1/8 teaspoon garlic powder, 2 teaspoons medium ground Tellicherry black pepper, 1 teaspoon medium ground white pepper, 1 teaspoon ground Dalmatian sage, 3/4 teaspoon ground coriander, 3/4 teaspoon ground ginger, 1/2 teaspoon ground allspice, 1/2 teaspoon ground cardamom (1/4 teaspoon ground black cardamom, 1/4 teaspoon ground green cardamom), 3/8 teaspoon ground fennel, 3/8 teaspoon ground winter savory, 3/8 teaspoon ground Tahitian vanilla beans, 1/8 teaspoon ground Turkish bay leaves, 1/8 teaspoon ground juniper berries.

  3. BREAK up any clumps if present, using fingers or the back of a spoon.

  4. SEAL the container with mixture.

  5. SHAKE container to mix well.

  6. STORE container sealed and store in a cool dry place if not using right away.

  7. WHEN READY TO USE: Open and add 2 level cups all-purpose flour, then seal the container.

  8. SHAKE mixture well until thoroughly combined.
