  1. 5 potato

  2. 1 onion, thinly, sliced

  3. 2 tablespoons olive oil

  4. 1/2 sweet red pepper, slivered

  5. 2 cloves garlic, minced

  6. 1 tablespoon minced fresh parsley

  7. 1/2 teaspoon salt

  8. 1/4 teaspoon dried rosemary

  9. 1/4 teaspoon pepper

  10. 1/2 cup shredded provolone cheese

  11. 1/2 cup shredded mozzarella cheese

  12. 1/4 cup freshly grated parmesan cheese

  1. Preheat oven to 450 degrees F (230 degrees C).

  2. Scrub potatoes and slice thinly.

  3. In bowl, toss together potatoes, onion and oil.

  4. Stir in red pepper, garlic, parsley, salt, rosemary and pepper.

  5. Brush 12-inch (30 cm) round pizza pan with oil; spread with potato mixture.

  6. Bake for 15 minutes or until tender, brown and crisp.

  7. Sprinkle with provolone and Parmesan cheeses; bake for 5 to 8 minutes or until golden brown.
